Roast level describes the degree to which a coffee bean has been heated during the roasting process. Coffee beans are, in their raw state, small, green, hard, and completely without aroma — they smell like hay or dried peas. The roasting process is what transforms them into the aromatic, brown, flavourful beans we recognise. The degree of roasting — from lightly browned to nearly black and glossy with oils — determines the balance between the bean's original character (called its origin character) and the new flavour compounds created by the roasting process itself.

The Specialty Coffee Association (SCA) does not use the terms "light," "medium," and "dark" as official classifications — instead, it uses a colour-based system measured by a device called a colorimeter, which assigns a numerical score based on the reflectance of light from the roasted bean. Higher scores indicate lighter roasts (more reflectance); lower scores indicate darker roasts (less reflectance, as darker surfaces absorb more light).

In practice, however, the industry and consumers use the light/medium/dark system almost universally:

  • Light roast: First crack to the early second crack. Light brown, dry surface.

The Roasting Process: What Happens to the Bean

Understanding why roast level affects flavour requires understanding what actually happens to a coffee bean during roasting. The process can be divided into several distinct phases.

Drying Phase (Up to 320°F / 160°C)

The green bean contains approximately 10–12% moisture. In the first phase of roasting, this moisture is driven off as steam. The bean remains green and smell-free until it reaches approximately 320°F — at which point it begins to turn yellow and smell like toasted bread.

Maillard Reaction (320–400°F / 160–205°C)

This is where coffee roasting really begins. Hundreds of chemical compounds are created as amino acids in the bean react with sugars. This is where most of the flavour compounds — including many that are responsible for the distinct character of light roasts — are created.

First Crack (Approximately 356°F / 180°C)

At a specific temperature (which varies by bean density and moisture content), the bean undergoes a dramatic physical transformation: the steam pressure inside the bean causes it to crack open, much like popcorn popping. The sound is audible from outside a commercial roaster. First crack is the traditional signal that a light roast has been reached. Light roasts are typically ended shortly after first crack subsides.

Second Crack (Approximately 410°F / 210°C)

At higher temperatures, the bean's structure begins to fail more dramatically. Cell walls collapse, more oils migrate to the surface, and the cracking sound is faster and more intense. Medium roasts are typically ended around the onset of second crack. Dark roasts are roasted through and beyond the second crack.

Caramelisation and Carbonisation (410°F+ / 210°C+)

As the roast progresses beyond second crack, the sugars in the bean caramelise — creating the sweet, toasty compounds characteristic of dark roast coffee. If the roast continues further, these compounds begin to carbonise, and the flavour shifts from caramel sweetness to charred, smoky, and increasingly bitter notes. Because the beans are roasted for less time, the sugars in the bean have less time to caramelise, and the origin character — the fruit, floral, and terroir-driven notes — comes through most clearly.

Typical light roast flavour notes include:

  • Fruity: Blueberry, strawberry, citrus, stone fruit, tropical fruit
  • Floral: Jasmine, lavender, elderflower, rose
  • Sweet: Honey, caramel, brown sugar, maple
  • Herbal/Tea-like: Black tea, chamomile, mint
  • Acidic: Bright, wine-like acidity that is a sign of quality in light roasts, not a defect

The acidity in a good light roast coffee is not the harsh, unpleasant acidity of stale or under-roasted coffee — it is a bright, complex acidity similar to the acidity in good wine. Appearance

At its best, a dark roast tastes of dark chocolate, toasted caramel, molasses, dark nuts (walnut, toasted almond), and subtle smokiness. At its worst — and this is where the criticism is warranted — it tastes of ash, burnt rubber, and charcoal.

The distinction is roast quality, not roast level. A well-roasted dark roast Brazilian coffee is one of the most pleasurable coffee experiences available. An over-roasted commercial dark roast designed to mask defects in poor-quality green beans is genuinely unpleasant.

This is one of the most persistent myths in coffee. The short answer is: yes, light roast has slightly more caffeine per bean by weight, but the difference is smaller than most people believe.

The Science

Caffeine is lost during roasting, but only minimally. By the time a bean reaches dark roast temperatures (464–482°F), it has lost approximately 10–15% of its original caffeine content compared to a light roast of the same beans. However, dark roast beans are less dense — more moisture has been driven off — so there are more beans per gram. When measured by volume (the way most home coffee brewing is done), a tablespoon of light roast coffee contains more beans than a tablespoon of dark roast coffee, which partially offsets the per-bean caffeine difference.

Pour-Over (V60, Chemex, Kalita Wave)

Light to medium roasts are ideal for pour-over. The high water temperature and relatively fast extraction of pour-over brewing allows the origin character of light roasts to shine. Dark roast poured over produces a flat, over-extracted result with pour-over — the dark roast is already highly extracted and the pour-over contact time is too long.

Espresso

Medium-dark to dark roasts are the traditional choice for espresso. Moka Pot

The moka pot produces a concentrated, strong coffee that is technically between drip and espresso. Medium-dark to dark roasts work best because the moka pot's brewing temperature is very high, which over-extracts light roasts and produces an unpleasant sour-bitter combination.

Recommendation: Dark roast or medium-dark roast.

French Press

French press suits all roast levels, but medium-dark to dark roasts are most commonly used. The full immersion brewing method extracts more of the coffee's compounds than pour-over, which means the bold, caramelised flavours of dark roast are balanced by the full body of immersion brewing.

Cold Brew

Cold brew extracts differently from hot brew — it produces a smooth, low-acid concentrate regardless of roast level. Choose light roast from a reputable specialty roaster. Ethiopian natural process, Kenyan washed, or Panamanian Geisha are the varieties most likely to reward light roasting with exceptional complexity. The flavour journey from first sip to last will be dramatically different — light roast coffee changes as it cools, revealing different layers of acidity, fruit, and sweetness as the temperature drops.

If You Want Bold, Strong, and Traditional

Choose dark roast from a quality roaster. Brazilian or Sumatra dark roast, specifically. Look for roasters who describe dark roast flavour as "dark chocolate" and "caramel" rather than "smoky" and "burnt." The best dark roasts are roasted to highlight sweetness, not to mask defect.

If You Want the Most Forgiving, Approachable Coffee

Choose medium roast. It is the most versatile, the most forgiving in brewing, and the most likely to produce a consistently excellent cup regardless of your technique level. It is the default for a reason.

If You Are New to Black Coffee

Start with medium roast. Light roast drunk black can be an acquired taste — the acidity that defines excellent light roast can be off-putting if you are used to the caramelised sweetness of darker roasts. Medium roast gives you the full coffee experience without the challenges of light roast.

If You Love Milk-Based Coffee Drinks

Medium-dark to dark roast is traditionally the best choice for espresso-based milk drinks. The bold, caramelised flavour of dark roast espresso cuts through the milk, producing a latte or flat white with genuine coffee character. The health effects of coffee are among the most studied topics in nutrition science. Here is what the research says about roast level and health.

Antioxidants

Coffee is one of the richest sources of dietary antioxidants in the Western diet. Both light and dark roast coffee contain significant antioxidant compounds, but the specific compounds differ:

  • Light roast retains more chlorogenic acids — compounds associated with anti-inflammatory, anti-metabolic syndrome, and blood sugar regulation benefits.
